Pumpkin Cranberry Bread Pudding

Required Ingredients:
4 egg yolks
2 whole eggs
1 cup heavy cream
1 cup whole milk
1 cup brown sugar
1 cup pumpkin puree
2 tbsp pumpkin pie spice
2 cups cleaned cranberries
1 lb small dice day old brioche

Procedure:
Combine eggs, cream, milk, sugar, pumpkin, and spices. Pour the mixture over the bread, biscuits or brioche. Mix thoroughly, and soak overnight. Place in greased and lined 2" 1/2 hotel pan. Bake in bain marie at 325F for approximately 1 hour or until fully set up.

Notes: Served warm with cranberry compote Caramel sauce & candied ginger ice cream.
